If you can afford an upgrade why not. What games and what resolution you play at? Becos its no use having tons of GPU power when you going to play MAME 32. So upgrade if you need too. The 6 series cards are awesome, 7 series more awesome.
Im getting a new rig, and it only has one ati HD5870 1gig , in it, I want to know if I should try find another one and crossfire them or, should I sell it and buy a better card?

Sell it, get a new GPU with more than 1GB VRAM IMO.

You can use more RAM to increase your PC speed. A more buffer area provide OS to do their task fast and easily load any program in the buffer space. Also more RAM can make your task done fast without any interrupt.
